A simple recipe (kitchen from the cupboard)
A dish that was eaten at my grandparents' (a Savoyard grandfather), then at my parents' and now at home (my children love it). When cooking is a family affair! This is a very simple recipe, a kitchen of the cupboard par excellence: a big thick salted pancake with cheese and lardons. A rustic dish (it's an old peasant recipe) to be made in the evening, accompanied by a green salad. Perfect to satiate your hunger (Matafan, meaning to quench the hunger).
THE INGREDIENTS OF THE MATAFAN:
For 4 to 5 people
- 20 cl milk
- 150 gr of flour
- 4 eggs
- about 100 gr grated cheese (comté, emmenthal beaufort)
- about 150 gr of bacon
- 1 pinch of nutmeg, salt, pepper
THE MATAFAN RECIPE:
- Mix the flour, the eggss and milk (into a very thick pancake batter). Then grated cheese
- Add a pinch of nutmeg (optional) . Salez (be careful if your bacon is smoked) and pepper
- Blanching bacon a few minutes in boiling water
- Do heat up some oil (or duck fat) in a non-stick frying pan, and pour the preparation into it
- Cook over low heat without stirring the preparation (just peel off the edges with a spatula) and let it set.
- When it comes off the pan and the underside is golden, sprinkle with bacon on top of the dough (which is not yet set and is a bit runny)
- Put the pan in the oven at 180° (or the cake on a baking dish) and finish cooking
- Enjoy it hot with a salad
TIPS:
1 - You can replace the bacon with small pieces of white or raw ham.
2 - You can also continue cooking in the pan with the preparation turned over, but it will be less swollen than in the oven.
